What's for dinner??

I know I haven't posted in a while. A while back a friend of mine posted this. I had been thinking along the same lines as well. So this last week I've cut back on computer-play-time. A lot. I've only allowed myself to get on once a day (unless I needed to pay bills or something) and only in he evenings when everything was done and the kids were in bed. But by then I didn't have a whole lot of time before I needed to go to bed. I got a ton done this week but I was exhausted!

I have missed posting more often and reading everyone's blogs. I finally caught up on reading (from our little anniversary trip, which I'll be posting about soon). But I found myself leaving fewer comments for the sake of time. Sorry if I neglected you!!

Anyway, as much as I miss checking blogs and facebook and all that more often, I feel much more balanced. It's been nice. Sorry to those of you who missed me so much. But you'll just have to get used to it. :)

And on to the title of this post: I'm trying to come up with some new dinner ideas. I'm a little bored with what I've been doing lately. So please share a few of your favorites with me!! I am a vegetarian and am trying to eat healthy (fell off the wagon for a while there, but I'm back at it again! you can expect a post on that soon as well:) but I've found that I can adjust most recipes to be both healthy and meatless. So please share anything and everything that you or your family love!!

My mom's salad...it is good! (she's also a health nut!)

cherry tomatoes
bowtie pasta
feta cheese or you can use parm..whatever
yellow red and green bell peppers
red onions
olives
dice them up to bite size;

I like to add pepperoni..but its all optional and you just mix that all together with kraft zesty italian dressing. It just tastes healthy!!

I've been trying to cut back on the internetting myself and it's hard! (for me at least) I see the lappy sitting on the table and I think, "Hey it's been like 3 minutes and 27 seconds since I've checked my email/the blogs, better look again..."

Our favorite meal right now is tostadas. I make fresh pico de gallo (3 or 4 roma tomatoes, 1/2 white onion, ~5 jalapenos [# of peppers depends on how hot you like it, scrape out the seeds and white membrane], a bunch of cilantro, juice from half a lime and salt to taste, chop, mix and enjoy) and guacamole (mash up a ripe, buttery avocado, add in several spoonfuls of the freshly made pico, a little salt and juice from half a lime). Just warm up a can of [fat-free] refried beans, if you want to add a little flavor, add a few dashes of tabasco sauce and some cumin powder. Fry up some corn tortillas and top with beans, cheddar cheese, pico, guac, sour cream (light, of course), etc... mmmmmm, I think that's what's for dinner tomorrow... :)

I've been cutting back too. I liked your friends' post a lot. I think she's got a really good point. It bugs me that I haven't blogged about all I want to, but it bothers me more when I think about my day and realize I've spent time looking at blogs that could have been spent doing productive things. It helps me to just leave the computer off until the evening or whenever I've decided to let myself have my blog/facebook fix. Then I have to turn it right off or I keep finding myself wandering back to it.

As for a good recipe, we like this rice and beans recipe. We put it in whole wheat tortillas and top it off with fresh tomatoes, avocados, etc.

Bring to a boil:
1 cup salsa
2 cups water
1 pkg. taco seasoning
1 can black beans, drained

Add:
2 cups minute rice

Top with cheddar cheese, cover, and simmer on low heat for five minutes.

• regular green salads with feta, kidney beans, and slivered almonds

• Amy's frozen meals

I hope this list gives you some ideas. Most of the time I have no idea what we eat.

I like to cook, but my recipes are boring. I love to bake so if your wanting any soy/wheat flour recipes, let me know! :)

Oh I don['t think any of our recipes would go vegetarian...we are a "if there's no meat, it's not a meal" family.

I hear you on the computer. I hardly ever leave comments anymore because of time. I'm a once a day user also:) Not for want, more for necessity.
